Cilantro Dip | Green Chutney

Cilantro also commonly known as Coriander is a herb from the parsley family. Cilantro is low in calories and has a high content of vitamin K which promotes strong bones & teeth. And like most leafy greens it is high in antioxidants

Cilantro dip or often referred to as green chutney in southern Asia goes well with most snacks, raw veggies, burgers, wraps, fried chicken and so on. The dip stays good for 2 weeks but you can store the dip in the freezer without adding yogurt for 3-4 weeks. Thaw, add yogurt and enjoy!

Green chutney

Prep Time: 4-5 mins
Cook Time: None

Ingredients:

1 bunch of cilantro/coriander
1 clove of garlic
a quarter of a small onion
½ of a small tomato
1 green chili (or 1 tsp chili garlic sauce)
2-3 tbsp lemon juice
4-5 cashews
Salt to taste
Pepper to taste
3-4 Tbsp yogurt

Directions:

Cut the roots of the cilantro bunch. roughly chop cilantro along with stems
In a blender add all ingredients except cilantro and blend it into a fine paste. Add cilantro and blend it to form a puree. Add more lemon or chilies as per taste if you would like. Serve with snacks of your choice!
