Garlic Bread and Peanut Crusted Fish | Haddock

Seafood is not generally preferred by everyone mostly because of the way it smells. Since I was a little girl, I have always been fond of seafood; contrary to other people in my family. But I have noticed people still love fish amongst all other seafood and frozen fish has made it easier for people to enjoy seafood. 

I wanted to try something different with fish; also I was out of breadcrumbs 😁Anyway; so decided to crust the fish with some peanuts for crush and bread crust crisped with garlic. The result; crust tasted amazing even without the fish. So either make a big batch of the crust or don’t munch it all before you have crusted the fish well😃 

You can serve the fish on a bed of salad with just olive oil and lime vinaigrette dressing or serve with some tartar sauce. I hope you enjoy the recipe as much as I did! If you do try, please tag us on Instagram Herbs_n_Garlic !!

Quick Tips: 

If you are using frozen fish; let it completely thaw before cooking. It will be much more flavourful and softer when cooked. Pat dry the fish before starting the cooking process

I used Haddock for the recipe; feel free to use any fish of your choice. Cod or Tilapia also goes well with this crust

Chop the peanuts roughly into very small pieces so that it sticks properly to the crust. After the crust mixture with bread is ready; I crush some pieces with hands as well since it’s crispy so crushes well. Don’t do it if its too hot

I baked the fish in the oven; if you do not have access to it then just cook it on low flame with lid on in 1 Tbsp of oil in a non-stick or grill pan!

Peanut crusted fish | Haddock

Prep Time: 10-15 mins 
Cooking Time: 15 mins 

Ingredients:

4 small pieces of Haddock or any other fish of liking
Crust from 2 slices of bread
A handful of Peanuts (Chopped)
2 cloves of minced garlic or 1 Tbsp of garlic paste
Salt, to taste
1 Tbsp Pepper
1 Tbsp of dried Oregano
1 Tbsp of dried parsley
1 Tbsp cayenne pepper or chili powder
1 Tsp of garlic powder (optional)
1 tsp dry mango powder (optional)
2 Tbsp of rice flour or all-purpose flour
1 Egg
1 Tbsp oil
1 Tbsp butter

Directions:

In a small bowl; mix all the seasonings – salt, pepper, dried oregano, dried parsley, cayenne or chili powder, garlic powder, and dried mango powder.

Finely chop the bread crust. Place a pan on medium-high heat; add butter and minced garlic or garlic paste. Let it cook for a minute and then add chopped bread crust. Add 1 tsp of seasoning mix to the pan and cook until the bread the crispy; takes about 5 minutes. Keep an eye not to burn the mixture. Towards the end add peanuts, cook for 1 minute and take it off the gas

Dust the fish with some flour so that it isn’t wet. In a small bowl; whisk an egg and add the rest of the seasonings to it. Dip the fish in the egg mixture and then roll it on the bread crust mixture. It will be chunky so you will have to carefully place crust on it so that it sticks well

Preheat the oven to 375ºF. Brush the oil on the pan. Place the coated fish on the baking tray. You top any leftover mixture on the fish. Bake the fish for about 15 mins. Serve with a nice salad or eat it on its own with some tartar sauce

Salad as in the picture:

In a bowl; toss some kale, spinach, lettuce, cherry tomatoes, and other greens of choice. Dress them with some olive oil and lime vinaigrette and serve your fish on top of it for a refreshing meal!
