Semolina is a type of flour made from durum wheat and is used to make pasta, Upma, savory cakes, and couscous. Semolina is an Italian word but in countries like India and Pakistan, it is referred to as Sooji or Suji.

Cooking Time: 5
Yield: 16-20 Idlis
Ingredients:
2 cups of Semolina flour
1 cup of yogurt
1 cup of water
1 tsp Eno (1tsp Eno = ½ tsp baking soda + ½ tsp citric acid)
Salt to taste
Directions:
PROCESS: In a large bowl, mix semolina flour, and yogurt. Add water little by little to mix well making sure no lumps form. The consistency should be slightly thick. Add salt, Eno, and let it rest for 2 mins.
Line a microwavable idli maker or a microwavable cupcake tray with some oil. Scoop and add the batter to the tray leaving space for the cake to rise. Run in the microwave for 3 mins and 30 seconds on high.
SERVING: Once a bit cool; remove from the tray and enjoy with this delicious spicy tomato chutney or some nice coconut chutney!
