Stuffed Chicken Breast with Sweet and Zesty Sauce | Oven-Baked

Easy baked chicken dinners are my favorites. Make a quick easy stuffing, some light sauce, bake it in the oven and voila your dinner is ready! Sounds simple, right? Well, it tastes amazing as well 😋😋

This baked chicken has a stuffing of mushrooms, red bell peppers and some nuts. You can make stuffing to your liking as well. I also love pan-seared stuffed chicken in garlic butter sauce with mushroom, spinach and cheese filling. You can get my recipe to it here: Pan-seared Stuffed Chicken

Baked chicken is such a simple dish and you get the goodness of proteins and veggies all in one dish. Have some toasted bread on the side for a perfect meal. It is so comforting to eat a nicely done chicken with some sweet and zesty sauce😋

Let’s get cooking but not before some quick tips first👇

Quick Tips:

Making some cuts on the chicken before you drizzle the sauce ensures that the chicken turns out juicy and absorbs all the sauce flavor
You can mix all the ingredients for the sauce in a bowl and add to the chicken and let it cook for an extra 5 mins if that seems easy for you. I usually simmer the sauce for 5 mins in a hot pan to enhance the flavor

Stuffed chicken

Prep Time: 10-15 mins
Cooking Time: 25-30 mins

Ingredients:

4 chicken breast pieces (skinless, boneless)
3 chopped garlic cloves
100gms chopped mushrooms
2 stalks of spring onion
1 bell pepper
5-6 chopped cashews (optional)
salt to taste
1 Tbsp pepper
1 Tbsp chili powder
1 Tbsp garlic powder
1 Tbsp dried oregano
1 Tbsp dried parsley

For the Sauce

Some chopped fresh parsley for the sauce
3-4 Tbsp butter
2 Tbsp oil
4-5 cherry tomatoes
1 tsp sugar
50ml chicken broth
2-3 Tbsp white wine (optional)

Directions:

Butterfly the chicken breast by slicing through the middle. Do not cut it all the way. Leave one slight corner. Open up the chicken breast and it will look like a butterfly. Refer to the picture below. Take a rolling pin and flatten the breast gently. Season it with salt, pepper, chili powder, garlic powder, dried oregano and dried parsley

Butterfly chicken

On medium-high heat add ½ Tbsp oil and 1 Tbsp butter in a pan; add mushroom and saute for 2-3 mins. Add cashews and let it saute for another minute. Add salt, ½ Tbsp pepper, minced garlic, bell pepper, spring onions and saute for 1-2 mins. Take it off pan. It will cook through with chicken in the oven

Generously add the stuffing to the chicken and fold. Season the chicken on both top and bottom with salt, pepper, chili flakes, garlic powder, dried oregano and dried parsley. Lightly oil the baking dish and place chicken on top. Drizzle some oil on top of the chicken and rub the spices in with the oil. It will help coat the chicken nicely. Place the chicken in the preheated oven for 20 mins at 375ºF

In a pan on medium-low heat, add 1 Tbsp oil and 2 Tbsp butter, remaining chopped garlic and saute for a minute. Add chopped parsley, lemon juice, chicken stock and saute for 2 mins. Add cherry tomatoes, a pinch of sugar and let it simmer for 2-3 mins

Take the chicken out from the oven, make some cuts with a knife or using a fork. Generously pour the sauce over the chicken. The cuts will help make the chicken juicy. Put it back in the oven for another 10 mins

Baked Stuffed Chicken

You can cook more or less as per your taste. I like the tenderness of chicken after 30 mins
