Cranberry Brie Puff Pastry Candy Cane

Ingredients

For the Sauce

  • 1/2 cup fresh cranberries
  • 4 tbsp brown sugar
  • 1 sprig fresh rosemary
  • 1/2 stick cinnamon

For the Candy Cane

  • 1 sheet puff pastry thawed
  • 350 gm brie
  • ¼ cup pecans roughly chopped
  • 1 egg beaten

Instructions

  • Pre-heat the oven at 375℉ or as per your puff pastry packaged instructions

For the Cranberry Sauce

  • Place a pan on medium heat, add in cranberries, sugar, cinnamon & rosemary. Let it heat for about 2-3 mins before adding in 1/4th cup of water. Mash cranberries to release juice using a spatula while heating the sauce. Once the sauce thickens remove from heat and let it cool

For the Puff Pastry Candy Cane

  • Cut the puff pastry sheet into half and then make triangles from the sheet. To assemble, place triangles onto a parchment lined oven safe sheet. Place each sheet partially over the other halfway through the previous sheet.
  • Cut brie into 1 inch thickness and place onto the base side of triangles/candy cane. Spread cranberry sauce over the brie. Top with crushed pecans. Fold the pointy side of triangle over the toppings. Make sure to tuck in the ends of puff pastry under the base so that it sticks well
  • Brush beaten egg over the puff pastry and bake for 25 mins or as per your puff pastry packaged instructions
  • The filling will be hot so let it slightly cool before Serving. Enjoy!
