In a bowl add all dry ingredients and spices, give them a mix. Add in chicken broth or water, mix well. Adjust the batter consistency needed. It should be slightly thick to coat the chicken well.
Add in the chicken wings and mix well to coat all pieces. You can marinate the chicken for 15-30 mins or just fry it directly
Place a deep dish pan on medium-high heat; add ½ cup of oil and let it heat. Adjust according to the pan you are using. Carefully, take each piece of chicken wings making sure it’s coated well in batter and gently place in hot oil
Fry them for 7-9mins on each side at medium-high heat. It usually takes me 2 rounds to finish frying the whole batch. Take them out on a kitchen towel to soak the extra oil
For the Sauce:
In a separate pan on medium-high heat; add oil and garlic paste and let it cook for a minute. Add in the rest of ingredients, mix well. Let cook for a minute again before turning the gas off
Once done; add chicken wings to the sauce and mix well. Cover the pan and gently shake it if needed to coat the wings but this step might break the outer layer so be careful. Or you can just carefully stir the wings in the sauce instead
SERVING:
Serve them as an appetizer with a mix of equal part Mayonnaise and Peri-Peri sauce. Enjoy!
