- 400 gm carrots
- 3 tbsp maple syrup sub for honey
- 2 tbsp orange juice
- salt to taste
- 1 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp chili flakes
- 1 tsp smoked paprika
- 4-5 sprigs fresh thyme sub for dried thyme or herb of choice
Pre-heat the oven to 425℉
Prep the carrots, peel and dice diagonally about 1 inch. If you are using slender small carrots, I would skip cutting
In a small bowl or container, mix all other ingredients except thyme and orange juice. Shake well
Pour over the carrots and make sure to coat well. Add in 2 sprigs of fresh thyme
Bake for 20-25 mins flipping halfway through
Serve hot with remaining thyme & fresh orange juice. Enjoy!
