Maple Glazed Chili Carrots

Ingredients

  • 400 gm carrots
  • 3 tbsp maple syrup sub for honey
  • 2 tbsp orange juice
  • salt to taste
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp chili flakes
  • 1 tsp smoked paprika
  • 4-5 sprigs fresh thyme sub for dried thyme or herb of choice

Instructions

  • Pre-heat the oven to 425℉
  • Prep the carrots, peel and dice diagonally about 1 inch. If you are using slender small carrots, I would skip cutting
  • In a small bowl or container, mix all other ingredients except thyme and orange juice. Shake well
  • Pour over the carrots and make sure to coat well. Add in 2 sprigs of fresh thyme
  • Bake for 20-25 mins flipping halfway through
  • Serve hot with remaining thyme & fresh orange juice. Enjoy!
