In a small bowl; mix all the seasoning together(salt, pepper, chili powder, oregano, and Piri-Piri seasoning). Season the chicken well with the dry rub on both sides; leave the remaining seasoning for the rice.
Place a pan on high heat with a tbsp of oil and sear chicken for 3-4 mins on each side to get a nice crispy layer. Take them out and set them aside. In the same pan; add the remaining oil along with sliced garlic and chopped onion. Saute for 2 mins and add in washed rice along with the remaining seasoning. Saute for a minute and add the chicken and broth. Top with cherry tomatoes and bake for 25-30 mins or until the rice and chicken are cooked!
SERVING: Serve hot with some garlic yogurt or on its own. Enjoy!
