In a small bowl or glass; mix all the ingredients except onions.
Cut the Onions into thin rings and slice the rings in half. Tightly pack the onions in a glass jar.
Place a pot on medium-low heat; add in all the mixed ingredients and let it heat. DO NOT BOIL; just enough to heat everything to combine salt, and sugar together with the rest of the ingredients. Pour this hot mixture onto the onions. Push onions with a spoon so that they are submerged nicely into the liquid. Close the lid and let the onions sit for 15-30 mins before serving!
