Creamy Lemon Chicken Pasta

The flavor of Lemon, when combined with Cream, tastes amazing. This cream sauce is super quick to make and has that tangy, creamy texture to it. Stir in your favourite pasta and enjoy this deliciously easy recipe. Instructions highlight  both non-vegetarian and vegetarian versions

Prep Time: 10-12 mins
Cooking Time: 20-25 mins

Ingredients:

2 cups of boiled pasta
400 gm thinly sliced chicken/tofu strips
1 egg
2 Tbsp cornstarch mixed with water to make a sticky paste (vegetarian version)
1 cup of flavored breadcrumbs (alternatively, flavor the plain breadcrumbs with salt, pepper, Parmesan, garlic powder or any flavors of your choice)
salt to taste
2 garlic cloves minced
1½ tsp ground pepper
½ tsp red chili powder
½ tsp dry mango powder (optional)
1 tsp oregano
1 tbsp dried parsley
1 lemon
¾ cup heavy cream
½ cup chicken/vegetarian broth
1 cup oil for shallow frying

Directions:

Whisk the egg in a bowl (whisking the egg makes it thin, creating a thin coating on the chicken)

Dip the chicken in the egg and then coat it evenly with breadcrumbs

In a pan, heat the oil on medium-high heat for shallow frying

Carefully place the coated chicken in the pan. Cook for 3-4 mins on each side until cooked completely. Take them out on paper towels to absorb the excess oil and let them rest

In a clean pan, add some oil, minced garlic and saute for 1 min. Add cream, broth and half a lemon juiced; season with salt, pepper, chili powder, dry mango powder, oregano, and dried parsley. Let it cook for 2-3 mins till the sauce thickens

In a separate bowl boil the pasta (as per boxed instructions) while you prepare the sauce
Add the boiled pasta, crispy fried chicken. Thinly slice the remaining half of lemon and add it at the end for an extra tangy flavor.

Vegetarian Version:

Dip the tofu in the cornstarch mixture and then coat it evenly with breadcrumbs

In a pan, heat the oil on medium-high heat for shallow frying
