Chicken Sliders with Mango Dressing

I love summers and summer dishes. Going for a nice picnic in the park, soaking up some sun, reading a book, having a chilled drink, walking, and playing on the grass. I pack my picnic baskets with some nice fruits, juices, summer salads, and of course these delicious chicken sliders. Who doesn’t love a good summer with nice food and drinks?

These chicken sliders with Mango dressing are perfect for those nice summer picnics. You can make the patties and keep in the freezer and use them later as well.

Chicken Sliders made with a combination of these juicy chicken patties with mango dressing in lime juice is just so refreshing and mouth-watering that you will love it. I made these and packed them in my picnic bag and off I went to the park by the lake and enjoyed it with my friends. Quick Tips:

I minced the chicken at home instead of buying from outside; it’s easier and the mince is very fine and sticky. Perfect to make patties and sliders. Just take the chicken, put it in the blender, and mince. Scrape down the sides for a smoother texture. You can do it in a small jar of the food processor as well. And don’t worry, your blender or food processor won’t smell if fresh chicken

I used Shallots for the mango dressing because they are less pungent and less bitter when eaten raw. You can use finely sliced onions too but keep them dipped longer in the lime juice to take away the raw taste

I used rice flour too because the homemade mince is very sticky. If you using store-bought minced chicken then you can skip the rice flour if you like. Alternatively, you can use either corn start of 1 Tbsp all-purpose flour if you don’t have rice flour at home but dry roast all-purpose flour in a pan for a couple of minutes before adding it so that it doesn’t taste raw

Mangoes are in the season so you can easily find a nice ripe mango in the market. Make sure it’s not too soft. If you are not able to find fresh mangoes, I have tried this recipe with frozen mangoes too. Just thaw the frozen mango chunks and cut them into thin strips. It still tastes amazing

You can use any buns of your liking. I used soft mini brioche for mine because of the soft, fluffy texture on them but you can use any buns that you like. If you are using burger buns or just regular bread then make the patties slightly bigger. In the case of bread; toast the bread a little so that it doesn’t become soggy.

 Prep Time: 10-15 mins 
 Rest Time: 20-30 mins
 Cooking Time: 10-12 mins

Ingredients:

For chicken Pattie:

2 Boneless Chicken breasts or 400 gm minced chicken
2 Tbsp rice flour or corn starch powder (I prefer rice flour)
Salt, to taste
1 tsp pepper
1 tsp cumin powder
1 tsp chicken tikka powder or curry powder
1/2 tsp ginger paste
1/2 tsp garlic paste
1/2 tsp chili powder
1 tsp dried parsley or you can use some freshly chopped parsley or cilantro (coriander)
2 Tbsp oil
2 Tbsp garlic butter or plain butter

For Mango Dressing:

1 ripe mango (Not too soft)
2 shallots or 1 small onion
1 Lime
1/2 tsp sugar
1/4 tsp oil
1/2 tsp soy sauce

Directions:

For chicken Pattie:

In a blender, mince boneless chicken breasts. Scrape down the sides if needed
In a bowl, add chicken, rice flour (if using), salt, pepper, cumin powder, chicken tikka powder, ginger paste, garlic paste, chili powder, and dried parsley, and combine well. Add 1 Tbsp of oil and mix evenly

In a small bowl, take some water and apply some in your hands to help you make patties easily. Water helps keeps the hand from sticking to the mixture and helps to prep patties quickly. I made small thicker rounds for sliders. You can make it according to your preference. Don’t make them too thick because it will be difficult to cook through. Yields around 8-10 patties depending on the size you make

Once done, cover them and keep them in the fridge for 20-30 mins or if you are in a hurry you can keep them in the freezer for 10-15 mins. Tip: Prep the mango dressing while the patties rest in the fridge

Once, you take the patties out of the fridge. Heat a pan on a medium setting, and add 1 tbsp of oil and 2 Tbsp of butter in a pan. Once the oil is hot, add chicken patties to it. Cover the pan with a lid and let them steam and cook for about 4-5 mins and turn them over to be cooked for another 4-5 mins. Once, cooked through take them out on a paper towel and let it rest till you are ready to assemble the sliders

For Mango Dressing:

Juice a lime in a small bowl. Tip: If you took it recently out from the fridge, heat it for 15 -20 seconds in the microwave, and the lime will easily juice and yield more

Add sugar, soy sauce, and oil to the lime juice and mix till sugar dissolves and oil is properly mixed in. Add shallots and let them soak in the mixture for 10 mins. This will infuse the shallots with lime juice and take that pungent raw flavor out of it

Thinly slice mangoes or julienne them as the chefs call it. After the shallots have been soaking in the lime juice for 10 mins. Add mangoes to it, mix well and let it rest till you are ready to assemble the sliders

Assemble the Sliders:

Heat the burger buns or slider buns. I dry heat them with no oil or butter.
Take the patties and press them onto the lower bun. Top with Mango dressing and voila you are ready to enjoy them!

You can store the patties in a ziplock bag; In the fridge for about a week or in the freezer for about 3 weeks. I hope you enjoy these amazing homemade summer sliders. Rock your next picnic with these sliders and impress your friends.
