Prep Time: 5 mins
Cooking Time: 10-12 mins
Ingredients:
¼ cup of corn
3 Tbsp all-purpose flour
1 Tbsp rice flour
1 tsp baking powder
¼ cup chopped bell peppers
chopped cilantro to taste
salt, to taste
1 tsp pepper
1 tsp cumin powder
1 tsp coriander powder
2-3 Tbsp oil
For Yogurt Dip:
4 Tbsp yogurt (Swap for dairy-free or Coconut yogurt if vegan)
1 Tbsp bell peppers
chopped cilantro to taste
1 tsp lemon juice
1 tsp pepper
1 tsp cumin powder
Directions:
In a small bowl, mix together all-purpose flour, rice flour, baking powder, salt, pepper, cumin powder, and coriander. Add a splash of milk and mix together so there are no lumps and it has a sticky thick consistency. Add bell pepper, sweet corn, cilantro, and mix properly
Heat 2 Tbsp oil in a pan on medium-high heat, scoop the mixture with a large spoon and add it to the pan to make small rounds. Flatten the top with the back of a spoon so that it cooks evenly. Let it cook for 2-3 mins on each side
Take it out and serve with the yogurt dip or any other dip of your choice!
Yogurt Dip:
Whip some yogurt with cilantro, chopped bell peppers, pepper, lemon juice, and cumin powder. Serve with the Corn Fritters
