On a wintery, snowy day when you are tugged in a blanket watching a nice movie; a bowl of soup will make your evening even more perfect. This simple, hearty soup recipe is the perfect combination of comfort and satisfaction. Put everything in the pan and on the stove; while you watch your movie this delicious soup will be ready in 30 mins for you to enjoy
Includes both Vegetarian and Non-Vegetarian recipe guidelines
Prep Time: 5-10 mins
Cooking Time: 30-35 mins
Ingredients:
250 gm of frozen veggies (You could use soup mix, Italian veggie blend or just simply chopped fresh carrots, celery, beans, zucchini, bell pepper or any of your loved vegetables)
150 gm of chopped chicken (or lightly fried tofu)
1 Tbsp olive oil
chopped ginger
4 cloves of chopped/crushed garlic
1 clove with head
1/4 tbsp cinnamon
Salt to taste
1/2 Tbsp black pepper
1 Tbsp chicken/curry spice powder
1 Tbsp chili garlic paste
1 tsp dried oregano
1 tsp dried parsley(optional)
chopped cilantro for taste(optional)
2 cups of water
4 cups chicken broth
4 cups vegetable/mushroom broth
1 Tbsp lemon juice (optional)
Directions:
On medium-high heat; place some oil in the pan
Saute ginger, garlic, clove, cinnamon and then add the rest of the ingredients
Add broth, water. Cover it with a lid and let it boil for 30 mins stirring it once a while
Add a bit noodles of your choice at the end if you wish and let it boil for an additional 5 mins till noodles are cooked. Top with some lemon juice if you like and enjoy it!
Vegetarian Version:
Follow the same steps as above replacing the broth with vegetable or mushroom broth
Lightly fry the tofu and add it in the last 10 mins
