This chili garlic mushroom & bean bowl made with mushrooms, beans, chili, garlic and spices is the ultimate comfort food. If you are looking to make something special for dinner; this chili bowl serves as an excellent side dish, in these taco salad bowls, or as stuffing to your vegan turkey; the possibilities are endless. I use it as stuffing in my vegan turkey recipe or in my taco salad bowls but I would highly recommend making more of it to enjoy with some garlic crusted bread😋😋
Prep Time:Â 5-10 mins
Cooking Time:Â 12-15 mins
Ingredients:
120gm (Mini) Cremini Mushrooms
500ml Can of mixed bean medley or any beans of your choice
1 Red Chili finely chopped (remove seeds if you want to decrease heat)
4-5 cloves of minced garlic
3 spring onion stalks
1 Tbsp Pepper
2 sprigs of fresh thyme
1 tbsp of cumin powder
1 Tbsp cayenne pepper or chili powder
1 Tsp of garlic powder
½ vegetable bouillon cube
Salt, to taste
2 Tbsp olive oil
Directions:
Place a pan on medium-high heat; add oil and mushrooms (If using mini mushrooms just separate heads using hands). Add salt and let it cook for 5-6 mins.
Add in chopped red chili, minced garlic and cook for a minute before adding spring onions and the rest of the spices.
Cook for about a minute before adding in canned beans. Add a splash of water if needed and cook for about 5 mins. Stuffing is ready! You can even have it on its own as a spicy vegan appetizer or use it as stuffing in Vegan Turkey!
