Chocolate Thumbprint Cookies | Holiday Edition

The holiday season is incomplete without some delicious holiday cookies. These chocolate thumbprint cookies are not delicious to eat but super fun to create with your family and friends. And they look so pretty and colorful, for me, they are perfect for holidays. A big secret, a big batch of cookies with a fraction of sugar than other recipes out there😋😋

Quick Tips: 

Make sure ingredients are at room temperature which makes for a delicious cookie batch also they will cream better when we mix sugar and butter. More on it in the recipe below👇🏻

Don’t knead the cookie batter, once you add the flour just mix and let it sit in the refrigerator for at least an hour or in the freezer for 30 mins

Feel free to store the cookie batter in the freezer for 2 weeks to bake at a later time. Once baked; cookies keep good at room temperature for about 3-4 days or in the fridge for about a week but keep it out for 10 mins before consuming

Chocolate thumbprint cookies filled with colored white chocolate and some with nutella, perfect for holiday christmas season

Prep Time: 8-10 mins
Cooking Time: 15-20 mins

Ingredients:

1¼ cup + 1 Tbsp of all-purpose flour
½ cup butter (room temperature)
1 Tbsp white sugar
½ cup brown sugar
¼ tsp baking powder
1 egg
1 Tbsp cacao or cocoa powder
1 Tbsp melted dark chocolate (optional)
2 Tbsp Nutella or more (for filling)
50gm white chocolate
Red and Green Food colorings

Directions:

In a small bowl; whisk butter and sugar together till it creams a bit, add in the egg and whisk again. It will have a nice creamy texture; add in the flour, cacao powder, melted dark chocolate (if using) and mix gently to combine into a dough but it will look a bit sticky which is just fine because we are going to let it chill for at least an hour or two

Preheat the oven to 375℉. Take the chilled dough onto a clean flat surface. Knead for 10-15 seconds to smooth out the dough. I made two sizes, depending on your liking; you can use either a Tablespoon or ½ Tablespoon or both to add some variation. Scoop the dough using the measuring spoon and make smooth balls

Place them on the baking tray. Using your thumb press the center to make a thumbprint or if you want it to be more precise; I would recommend using the back of a teaspoon to create the indentation. Gently press the dough balls in the center to create the print without breaking the structure

Bake the cookies for 15 mins in the oven. Once you take them out, press the cookies in the center again while it’s a bit soft to make sure the indent remains prominent. Be careful the baking tray would be hot

In a small bowl; melt the white chocolate heating in a microwave at 30-second intervals. Fill some cookies with plain white chocolate and add some sprinkles to decorate; divide the rest of the white chocolate in 2; add a couple of red food color to one bowl and a couple of green food color to another bowl. Fill the cookies with colored chocolate. Fill some cookies with Nutella if you like. Fill your favorite chocolates as you please; I just filled with various colors and tastes to create some variation😋😋
