Eggy Bites | Quick and Easy Breakfast

Eggs are a high source of protein, vitamins, and minerals. These mini egg bites are very simple to make and are ready in just 10mins. Since they are baked in the oven, no oil or butter is needed to cook them. These eggy bites have eggs, spinach, and mushroom that when combined with seasonings taste delicious and makes for a perfect breakfast. Serve with bread or on its own! 🍳

Breakfast Idea

Prep Time: 5 mins
Cook Time: 8-10 mins
Yield: 5-6 egg bites


4 eggs
½ cup of chopped spinach
¼ cup of chopped mushroom
salt, to taste
pepper, to taste
garlic powder, to taste
Oregano, to taste
¼ shredded cheese of choice (I used cheddar)


Preheat the oven to 375º F

In a bowl, separate egg whites with yolks. I leave the yolks in the shells so that it’s easy to top later. Whisk the egg whites, add chopped spinach, chopped mushrooms, salt, pepper, garlic powder, and oregano. Season according to taste

Egg and Spinach

Line a cupcake tray with cupcake liners or brush oil if you have no liners. Evenly add the mixture into 5-6 cups of the tray. Top with cheese and add the yolks on top

Bake it in the oven for 8-10 mins and its ready to serve!
