These Garlic Lemon Greens Beans are healthy and can be eaten any time of the day which is what makes this such a perfect dish.

How to Cook Garlic Lemon Green Beans

So there are two ways you can go about this. The first method makes sure your beans turn out nice and crispy but it does involve an extra step. The second method is what I call the lazy method because it eliminates the step to blanch the beans. For the first method:

    1. Bring a pot of water to a boil. To the boiling water; add in the beans and blanch for 2 minutes

    1. Strain and dunk the blanched beans in a bowl of Ice water for 4-5 minutes. This ensures that the beans retain their shape and stay crunchy.

    1. Strain and dry the beans with a paper towel.

    1. In a heated pan add oil and garlic. Saute for a minute.

    1. Toss in the beans and saute for a couple of minutes.

    1. Add in the spices and cook for another 2 minutes.

    1. To the turned-off gas add lemon juice. Stir and let beans absorb the juice for at least 30 seconds before serving!

For the second method or my lazy method:

    1. Wash and dry the green beans with a paper towel. In a heated pan add oil and garlic. Saute for a minute.

    1. Toss in the beans and saute for a couple of minutes.

    1. Add in the spices and cook according to how you like your beans. I generally cook for another 2 minutes and turn off the gas.

    1. To the turned-off gas add lemon juice. Stir and let beans absorb the juice for at least 30 seconds before serving!

Some Recipe Notes for Garlic Lemon Green Beans

Prep ahead of time for the recipe; you can parboil or blanch the beans ahead of time and store in an airtight container if you want to use the first method. Cutting the tips off of beans is completely optional. I personally sometimes do not cut the tips, it just makes the process easier and faster!

French Greens Beans are the perfect choice of beans for this recipe because of their slender and sweeter taste. And this variety is perfect for the lazy method as well because they cook quicker!

You can use Sliced Lemon instead of Lemon Juice. Just add lemon slices instead of lemon juice after adding in the spices for it to release the juice and absorb better. But be wary of how many slices you can because it can quickly become way sourer if you can too many slices. I would recommend 2-3 thinly sliced lemon rings.
