Tandoori Aloo Skewers
Ingredients
- 2 large potatoes cut into cubes
- 1 bell pepper
- 1 Onion
- 1 Cilantro
- salt to taste
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp Yogurt
- 1 tsp coriander powder
- ½ tsp Chili Garlic paste
- 1 tsp dry mango powder optional
- ghee or olive oil as needed
Instructions
- PROCESS: In a microwave safe bowl add cubed potatoes with a bit of salt and microwave for 5 mins on high setting. Leave it in till you prep the marination.2 large potatoes, salt to taste
- In a small bowl; add all ingredients except potatoes, bell pepper and onion. Mix well to make a paste.salt to taste, 1 tsp black pepper, 1 tsp cumin, 1 tsp Yogurt, 1 tsp coriander powder, ½ tsp Chili Garlic paste, 1 tsp dry mango powder
- Once done add strained cubes of potato, cut bell pepper, and cut onions. Mix well to coat well. Cover and marinate for 30 mins at room temperature.2 large potatoes, 1 Cilantro, 1 bell pepper
- Skew potatoes, bell pepper and onions on wooden skewers in same order or as per preference leaving a bit of room on each skewers to turn them. Leave a small gap after you skew one set(potatoes, bell pepper and onion) for cooking.
- METHOD 1: Heat a grill pan on medium-high heat; lightly brush ghee or olive oil on pan. Place skewers on top and grill 2-3 mins on each side. Make sure to cook all 4 sides of potato cube for best results.
- Brush oil or ghee on of skewers as needed. A bit of black char is what you are looking for in potatoes and veggies to have that nice grill taste.ghee or olive oil as needed
- METHOD 2: You can follow the same steps in method 1 and grill these on a barbeque as well.
