Easy One-Pot Chicken and Rice

One-pot dinners are such a great idea when you want something hearty but with minimum effort. This one-pot chicken and rice dinner is just the fix for a delicious comforting meal with minimum effort. Seasoned crispy chicken and rice infused with flavor from the chicken and seasoning taste absolutely incredible. I love how this meal is loaded with flavors. Enjoy this one-pot chicken and rice with some garlic yogurt or just as is, bet you’ll fall in love!

Ingredients

  • 4 pieces chicken thighs skin-on
  • 1 medium onion diced
  • ½ cup cherry tomatoes
  • 2-3 cloves garlic thinly sliced
  • ½ cup rice
  • 1 cup chicken stock/broth Sub for water
  • salt to taste
  • 1 Tbsp black pepper
  • 1 Tbsp red chili powder Sub for paprika
  • 1 Tbsp oregano dried
  • 1 Tbsp Piri-Piri seasoning Sub for cajun spice
  • 3 Tbsp Olive Oil

Instructions

  • PROCESS: Preheat the oven to 375℉
  • In a small bowl; mix all the seasoning together(salt, pepper, chili powder, oregano, and Piri-Piri seasoning). Season the chicken well with the dry rub on both sides; leave the remaining seasoning for the rice.
  • Place a pan on high heat with a tbsp of oil and sear chicken for 3-4 mins on each side to get a nice crispy layer. Take them out and set them aside. In the same pan; add the remaining oil along with sliced garlic and chopped onion. Saute for 2 mins and add in washed rice along with the remaining seasoning. Saute for a minute and add the chicken and broth. Top with cherry tomatoes and bake for 25-30 mins or until the rice and chicken are cooked!
  • SERVING: Serve hot with some garlic yogurt or on its own. Enjoy!
