My lazy Potato & Chorizo Breakfast Hash Recipe

This easy delicious potato & chorizo breakfast hash is a classic. Enjoy it as a lazy breakfast with toasted bread or on its own; you’re going to love every bite of it. I used an Italian chorizo sausage; the spicy Italian sausage is so juicy and full of flavor that makes this breakfast hash taste exquisite.

For breakfast; the addition of the eggs makes it perfect but if you wish to serve it as a side dish you can serve it without the eggs and I bet it will be a hit with your family and friends.

Ingredients

  • 190 gm Italian Chorizo Sausage Broken or chopped into small pieces
  • 80 gm Potato Diced into small cubes
  • 1 cup chopped spinach
  • 3 eggs
  • 1 Shallot finely diced
  • ¼ cup shredded parmesan
  • Salt to taste
  • Black pepper to taste
  • ½ tsp Italian seasoning Sub for dried Oregano or dried parsley
  • ½ cup Microgreens optional but tastes amazing
  • 1 Tbsp Oil

Instructions

PROCESS: This dish can be prepared two ways; either in the oven or gas-top:

    Oven Method: Preheat the oven to 400℉

    • In a microwave-safe bowl; add chopped potatoes, water to cover the potatoes, and some salt. Microwave for 5 mins. (This step speeds up the whole preparation)
    • While the potatoes get a bit done. Place an 8-inch cast-iron skillet on medium-high heat; add in the oil and chopped shallots. Saute for 2-3 mins until translucent. Add in chopped chorizo and saute for 2-3 mins. Add in salt, pepper, cajun seasoning, Italian seasoning (if using), and strained potatoes. Mix well and place in the oven for 10 mins.

    • Mix well and the spinach will wilt with heat from the pan

    • Once done; make small holes for 3 eggs using a spoon leaving a bit of gap between each egg. Sprinkle parmesan cheese before adding in the eggs

    • Crack eggs in the holes you made. Top with some black pepper and Italian seasoning as desired and place in the oven for 9-12 mins depending on how you like your eggs.

    Gas-Top Method:

    • In a microwave-safe bowl; add chopped potatoes, water to cover the potatoes, and some salt. Microwave for 5 mins. (This step speeds up the whole preparation)
    • While the potatoes get a bit done. Place a pan on medium-high heat; add the oil and chopped shallots. Saute for 2-3 mins until translucent. Add in chopped chorizo and saute for 2-3 mins. Add in salt, pepper, cajun seasoning, Italian seasoning (if using), and strained potatoes. Mix well; cover and cook with a splash of water till potatoes are almost done. Usually takes about 7-9 mins.
    • Add in the spinach. Mix well and the spinach will wilt with heat from the pan
    • Once done; make small holes for 3 eggs using a spoon leaving a bit of gap between each egg. Sprinkle parmesan cheese and crack eggs in the holes you made. Top with some black pepper and Italian seasoning as desired. Cover and cook for 5-7 mins depending on how you like your eggs.
    • Top with microgreens and Enjoy!
