Instructions
PROCESS: This dish can be prepared two ways; either in the oven or gas-top:
Oven Method: Preheat the oven to 400℉
In a microwave-safe bowl; add chopped potatoes, water to cover the potatoes, and some salt. Microwave for 5 mins. (This step speeds up the whole preparation)
While the potatoes get a bit done. Place an 8-inch cast-iron skillet on medium-high heat; add in the oil and chopped shallots. Saute for 2-3 mins until translucent. Add in chopped chorizo and saute for 2-3 mins. Add in salt, pepper, cajun seasoning, Italian seasoning (if using), and strained potatoes. Mix well and place in the oven for 10 mins.
Add in the spinach
Mix well and the spinach will wilt with heat from the pan
Once done; make small holes for 3 eggs using a spoon leaving a bit of gap between each egg. Sprinkle parmesan cheese before adding in the eggs
Crack eggs in the holes you made. Top with some black pepper and Italian seasoning as desired and place in the oven for 9-12 mins depending on how you like your eggs.
Once baked. Top with microgreens and Enjoy!
Gas-Top Method:
