Kebabs are cooked meat dishes with a blend of spices; this dish can be served with salads, rice, tortillas, or can be eaten with any dips, chutneys as a snack. Shami Kebab originates from the Indian Sub-continent; a very popular and delicious delicacy served in countries like India, Pakistan, and Bangladesh. My recipe uses a combination of minced chicken, lentils, spices, and herbs 🌿
Prep Time: 15-20 mins
Cooking Time: 30-35 mins
Ingredients:
250 gm minced chicken
1/4 cup of split pea lentils
2 Tbsp of garlic paste (or 3 cloves of minced garlic)
1 medium-sized chopped onion
1 Tbsp of ginger paste
Salt to taste
1 Tbsp black pepper
1 tsp cumin seeds
1 clove with head
1/2 Tbsp of cumin powder
1 tsp of chili powder (or Caynesse pepper)
1 Tbsp garam masala
1 Tbsp coriander powder
1 Tbsp chicken spice powder
1/2 cup fresh coriander
2 Tbsp clarified butter or olive oil
1 egg
1/2 cup of bread crumbs (optional)
Directions:
Soak the lentils in hot water for 15 mins; the drain
On medium-high heat; place some oil in the pan. Add cumin seeds, clove and sauté for 1-2 mins. Add soaked lentils and sauté for 2-3 mins
Add chopped onion, ginger, garlic and sauté till onions turn golden brown
Add salt, black pepper, cumin powder, chili powder, garam masala, coriander powder, chicken spice powder and add the minced chicken
Once, the chicken is cooked through, add fresh coriander and let the mixture cool
In a blender or food processor grind the chicken mixture to get the smooth kebab consistency
You can follow either of the two ways:
Add egg to the mixture (helps to bind) and make small rounds. Wet your hands if necessary so that the mixture doesn’t stick to your hands
Make small rounds with the mixture; apply eggs wash and then lightly bread it with bread crumbs. This method turns out much more crispy
Baking / Shallow Frying:
For Baking: Preheat the oven at 400℉; brush with some oil and bake for 8-10
Flip it halfway through. You can broil it for a couple of mins at high heat if you want to make it crispier. But be careful not to burn it
For Frying: Heat the 6 Tbsp oil in a pan on medium-high heat
Once the oil is heated, carefully place the Kebabs in oil. Cook them for 3 mins on each side, carefully turning them so that they do not come apart
Use a kitchen towel to absorb the excess oil
