I love having noodle soup, it’s such a simple broth dish that is ready in just under 20 mins. I made this recipe with homemade broth that was flavored with cloves, cinnamon, chicken bone, shredded chicken, ginger, garlic but store-bought broths are a great alternative as they are packed with good and healthy flavors too. I prefer buying low sodium versions if I buy from stores. This soup is good on its own too but the addition of noodles makes it a perfect meal for lunch or dinner. That zesty lemon flavor makes it stand out

Prep Time: 5 mins
Cooking Time: 15-20 mins
Ingredients:
100 gm of chopped chicken (or lightly fried tofu)
½ cup of mushrooms
Freshly chopped ginger
2 cloves of chopped/crushed garlic
2 stalks of green onion
Salt to taste
½ Tbsp black pepper
1 tsp chili garlic paste(optional)
1 tsp soy sauce
1 tsp dried oregano
1 tsp dried parsley(optional)
2 cups of water
4 cups chicken broth/vegetable/mushroom broth
2 Tbsp lemon juice
2 packets of noodles (rice, egg, ramen whichever one’s you prefer)
Directions:
Place a pan on medium-high heat; add chicken or vegetable broth, water, chicken/tofu mushrooms, ginger, garlic, green onion stalks (leave the leaves for later) along with the rest of the ingredients. Add lemon juice towards the end
Cover it with a lid and let it boil for 15-20 mins stirring it once a while
Place boiled noodles in a bowl, add soup on top it. Serve with a soft-boiled egg on top!
