Ingredients

  • 300 gm chicken
  • 3 cloves garlic minced
  • 6 mint leaves
  • ¼ cup tequila
  • 2 tbsp lime juice
  • salt to taste
  • pepper to taste
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Lime wedges to serve

Instructions

  • PROCESS: In a small bowl; add all ingredients except lime wedges. Mix well
  • Cover and marinate for 30 mins
  • Skew chicken onto wooden or steel skewers. Tip: If using wooden skewers; soak them in water for 20 mins so that they don’t burn while cooking
  • METHOD 1: Heat a grill pan on medium-high heat; lightly brush olive oil on pan. Place skewers on top and grill 10-12 min each side
  • Brush oil onto the skewers as needed. Slight black grill marks is what you are looking for
  • METHOD 2: You can follow the same steps in method 1 and grill these on a barbeque as well.
  • The cook time will vary between both methods!
  • SERVING: Serve hot with mint chutney. Enjoy!
