In a baking tray; add halved tomatoes, onion, garlic, and thyme sprigs. Drizzle with oil, salt, and pepper. Roast for 40 mins.
After 40mins; let the roasted tomatoes cool down a bit and blend in a blender. Use the broth if needed. Place a pot on medium-high heat and add the blended soup mix. Add in the remaining broth, cream, and chili powder. Let it cook for 10-15 mins. Taste test and adjust seasoning if needed.
SERVING:
Garnish with parmesan and cream. Serve hot with garlic-crusted bread or with these Cheese Sticks. Enjoy!
