In a bowl; add diced chicken, minced garlic, salt, pepper, red chili powder. Marinate for 15-30 mins. It’s optional to marinate but it helps break the chicken and makes it tender
PROCESS:
Place a pan on medium-high heat; add oil or butter, chopped shallots and sauté for 5 mins or till golden brown, add a pinch of water to bring together the shallots if they are sticking to the pan.
Add in mushrooms, marinated chicken; cover and cook. Once the chicken is cooked through, add bell pepper if using. Cook for 2 more minutes before turning the gas off
YOGURT DIP:
While the chicken cooks; prepare the yogurt dip. In a small bowl, cream the yogurt, add in grated garlic, dried dill, lemon juice and a pinch of salt pepper. Mix well and it’s ready to serve!
Serving:
Take hard or soft shell tacos; add chicken & mushroom mixture top with yogurt dip, avocados and chopped cilantro if using. Serve with Lime Wedges!
