Gluten Free Healthy Chocolate Banana Muffins

We all need effortless breakfast recipes for those rushed mornings. These healthy chocolate banana muffins are ready in under 20 mins and taste delicious. Two quick ways and ingredients from your pantry are all you need to make this perfectly healthy breakfast. And yes; they are gluten-free and refined sugar-free.

These chocolate banana muffins turn out so moist and delicious. Most recipes use sugar and I personally like to sweeten desserts as naturally as possible. The trick is to use ripe bananas; the riper the bananas the sweeter the muffins and a bit of maple syrup will go a long way to make them soft and yet so delicious.

How to make Chocolate Banana Muffins

I have included two ways/methods to make this recipe.

Method 1 is if you do not have a blender or do not wish to use one but the only caveat with this method is that the bananas might have some banana lumps which can take show up in the end result sometimes and some people do not like that taste so make sure you mash them completely when using this method.

Method 2 is the easiest and smoothest way to prep them; add all ingredients to a blender, transfer to a greased tin or muffin tray, and Bake!

For the toppings; I use almond flakes or chopped almonds once they are in the muffin tray or sometimes chocolate chips but if you want to keep it simple then just skip either or both and enjoy the delicious and healthy chocolate banana muffins on their own!

Ingredients

  • 3 ripe bananas
  • 3 eggs
  • 1 cup almond butter Substitute for Peanut butter
  • ¼ cup cacao powder
  • 1 tsp maple syrup
  • 1 tsp baking powder
  • chocolate chips optional topping
  • Sliced almonds optional topping

Instructions

PROCESS:

  • Pre-heat oven to 350ºF

Method 1:

  • In a bowl; mash the bananas. Add almond butter, maple syrup, cacao powder, and baking powder and mix well.

  • Add one beaten egg at a time and mix well. Make sure the mix doesn not have too many banana lumps.

  • Pour the mixture into greased muffin trays. Top with chocolate chips or sliced almonds; bake for 15 mins.

Method 2:

  • In a blender; add all the ingredients. Blend for 2-3 mins, scraping the sides(if needed).
    3 ripe bananas, 3 eggs, 1 cup almond butter, 1 tsp maple syrup, ¼ cup cacao powder, 1 tsp baking powder
  • Pour the mixture into greased muffin trays. Top with chocolate chips or sliced almonds; bake for 15 mins.

15 mins are all it takes to make these delicious gluten-free breakfast muffins. You can make a big batch; store it in the refrigerator in an airtight container for 2 weeks or up to 5 days in a cool, dry place!
