Double Chocolate Chip Cookies

I am a big chocolate fan and everything chocolate. More chocolate the merrier so adding in a lot of chocolate to these delicious double chocolate chip cookies. I did add less sugar than other recipes out there which is because I like to keep them low in terms of sugar content.

As good as these taste on its own; you can give them a twist by spreading some Nutella spread or caramel on them or add some ice cream between two cookies and roll in some slivered almonds as I did.

Quick Tips: 

The big secret to delicious cookies is using fresher ingredients and not overbaking them. After baking usually cookies are softer but remember they take their shape and structure as it cools.

Another big thing about baking delicious cookies is having ingredients at room temperate, trust me that makes a big difference.

You can shape them and size them as you like. I made slightly chunkier one’s. If you like smaller ones keep them to a smaller scoop.

I used cacao powder instead of cocoa powder because it has much more health benefits contrary to cocoa powder. But if you do not have cacao powder; use cocoa powder instead

Prep Time: 8-10 mins
Cooking Time: 12-15 mins

Ingredients:

2 large eggs
1¼ cup flour
¼ cup cacao powder
½ cup chocolate chips
½ cup sugar
1 tsp baking powder
½ tsp instant coffee
½ tsp vanilla essence
2 Tbsp milk
50 gm dark chocolate
50 gm white chocolate (or semi-sweet milk chocolate)
2 Tbsp butter
1 Tbsp peanut butter (optional)
Pinch of kosher salt (or regular salt)

Directions:

Preheat the oven at 350℉

In a small bowl, add dark chocolate, white chocolate, butter and peanut butter. Mix and heat in the microwave at 30 seconds intervals till melted but let it cool a bit

In a large clean bowl; whisk eggs and sugar to a creamy texture and it takes about 3-4 mins. Add instant coffee, vanilla essence, milk, salt and melted chocolate mix but gently cooled before adding

Will add the dry ingredients one at a time. Add in the baking powder, cacao powder and mix well. Add in the flour a little bit at a time until well incorporated. Add in the chocolate chips and mix well

Line a baking sheet with parchment paper or a silicone mat. Using either a scoop or using a tablespoon, scoop out cookie dough on the baking sheet keeping them an inch apart. Gently press the cookie dough using the back of a spoon and get ’em baking. Bake them around 12-15 mins and voila you have some delicious cookies
