Instructions
- Pre-heat the oven to 425℉
- Prep the carrots, peel and dice diagonally about 1 inch. If you are using slender small carrots, I would skip cutting
- In a small bowl or container, mix all other ingredients except thyme and orange juice. Shake well
- Pour over the carrots and make sure to coat well. Add in 2 sprigs of fresh thyme
- Bake for 20-25 mins flipping halfway through
- Serve hot with remaining thyme & fresh orange juice. Enjoy!
