Ingredients for Veggie Samosa with Frozen Paratha

The boiled potato serves as the hearty and substantial base for the samosa filling. Potatoes are a versatile ingredient that, when boiled, attain a soft and fork-tender consistency. They contribute a satisfying texture and mild flavor to the filling, ensuring a comforting and substantial bite in every samosa.
Peas add a vibrant burst of color and a slightly sweet flavor to the veggie samosa filling. These petite green gems provide a delightful contrast to the softness of the potatoes, offering both visual appeal and a subtle sweetness that enhances the overall taste profile of the samosas.
The frozen paratha acts as the convenient and flaky pastry encasing the flavorful vegetable filling. Thawing the paratha slightly makes it pliable and easier to work with when forming the samosas. The paratha’s layers will crisp up beautifully during the baking process, adding a delightful crunch to complement the savory filling.

How to Make Veggie Samosa with Frozen Paratha

At the heart of this recipe lies the humble boiled potato, offering a comforting and satisfying base to the samosa filling. Boiling them to a fork-tender perfection creates a velvety texture that harmonizes beautifully with the crispness of the frozen parantha. The addition of vibrant peas introduces a subtle sweetness and a burst of color, elevating the overall visual and taste appeal of these samosas.

To bring this Veggie Samosa to life, a symphony of spices is essential. Cumin seeds, when heated in ghee, release a warm and earthy aroma that sets the stage for the flavor journey ahead. Minced garlic adds a robust and aromatic quality, while coriander powder contributes a mild citrusy undertone. A dash of chili powder introduces a hint of heat without overpowering, and turmeric not only imparts a golden hue but also brings its distinctive earthy flavor to the mix. The result is a filling that dances on the palate, each spice playing its part in a well-choreographed culinary performance.

What makes this recipe a standout is the clever use of frozen paratha. Slightly thawed for pliability, the paratha unfolds to become the perfect encasement for the flavorful filling. As the samosas bake, the layers of the paratha crispen up, creating a symphony of textures that range from the satisfying crunch on the outside to the delectable softness within.

  • 2 cups boiled potato
  • ¼ cup peas
  • 4 frozen parantha slightly thawed
  • 1 tsp cumin seeds
  • 1 tbsp garlic minced
  • 1 tbsp ghee
  • salt to taste
  • 1 tsp coriander powder
  • 1 tsp chili powder
  • ½ tsp turmeric

  • Pre-heat the oven at 350℉

Prepare the filling

  • Boil the potatoes. You can either use the traditional method of boiling water and placing the potatoes in till boiled or use the microwave method.
I love the microwave method since its super easy. In a heat safe bowl, add in peeled & chopped potatoes along with salt. Cover with water and heat for 5-6mins or until they are fork tender
  • Place a pan on medium-high heat, add in ghee, cumin seeds and wait until they crackle
  • Add in minced garlic and saute till the garlic is fragrant. Then add in the peas, boiled potatoes & spices. Mix well. Let it cook through (about 5 mins)

Make the Samosa

  • Cut the thawed parantha in half. Take the half of parantha and fold from one end towards the middle and fold the end on top, turning it into a cone
  • Place about 1-2 tbsp of filling into the cone and fold the ends to seal everything in. Place them bottom down to hold the shape
